Stuffed Grilled Squid

Posted on Updated on

As part of this initiative of blogging the dishes that I cook at home, here I am starting that agenda. I bought some fresh squids at Cold Storage yesterday in an attempt to veer away from the usual pork and chicken that we usually buy and cook, and take note we buy them frozen! So yesterday, I cooked some fresh mussels (which I am hoping to post soon) and today was stuffed grilled squid.

Back home (Manila), when cooking seafood, one of the common ones I would say is this dish. We can just stuff it up and grill them at the backyard or garage (lol) with made up griller from stacked up wires and wood stands. :)) We grill them to perfection with having that bit burnt taste which is really the highlight of it, for me and then we dip it in sauce made up of small lime and soy (omg, mouthwatering).

And so, today, I let myself try that and grill it in my brother’s non stick grill pan.

Ingredients for the Stuffed Squid:

  • 3 pieces big squids
  • diced onions
  • diced tomatoes
  • cilantro with stem (not chopped but roots removed)
  • pepper and salt
  • lemon juice
  • paprika

Ingredients for the Cilantro Lemon Soy Sauce:

  • chopped cilantro
  • chopped green peppers
  • sugar
  • balsamic vinegar
  • soya sauce

  • combine the chopped onions and tomatoes in a bowl
  • drizzle it with lemon juice
  • add salt and pepper
  • mix them together
  • with the cleaned squid (removed all that innards lol), stuff a cilantro then spoon the onion and tomato mix and stuff some cilantro again, do them in alternates until the squid is almost full with stuffing
  • seal with a toothpick
  • put the stuffed squid in a flat container and season with pepper, salt and paprika
  • let sit for half a day to 1 day for everything to incorporate
  • grill them in a pan until the squids get smaller in size and outsides are a bit burnt
  • for the sauce, just mix up everything
